What do you make when you’re exhausted at the end of the day, have just enough energy to cook something simple, and want to treat yourself?

for me, I am a sucker for a massive plate of aglio e olio with plenty of crushed chillies, far too much sliced garlic, and a surprisingly restrained helping of grated hard cheese.

@katherine my two favorite very comforting things that I can make with my eyes closed are: pasta with broiled cherry tomatoes and a sauce made by throwing an avocado, a handful of herbs, olive oil, and lemon juice into the food processor; and spicy ketchup-braised tofu, which is pretty much what it sounds like, and which is so good over rice, optimally with a thing of frozen creamed spinach on the side

@wintgenstein god I used to go feral for tuna when I was 7 before I became a vegetarian. Don’t remember what it tastes like but I’m sure it goes amazing with macaroni cheese and I wish I could try it now...

@katherine I make noodles with a peanut butter sauce and whatever veggies I have that seem plausible, but ideally spinach and carrots at least. Lots of garlic, some lime juice or balsamic, it's good stuff.

@mike god yes that rules!! My second favourite comfort dish is basically that, a vegetarian colcannon with fried onions on the side

@katherine I was vegetarian for about 20 years and I would grab any vegetarian faux-meat sausages available to do this. Some of those were not so great, it was definitely the potato and fried onions that were the important part!

@katherine I’ll fry up some veg and some kind of protein (tofu/mushrooms/fake meat/beans) with whatever seasoning I feel like having and put it in a wrap, that way I don’t have to go to the extra effort of boiling pasta or rice

@dreadpirateyarr yes!!!! I always keep spare tortillas around because, frankly, they are my favourite type of bread and they round out a meal with carbs and structure so easily. I make tofu or bean tacos/wraps roughly once a week at least.

@katherine this is basically mine, too - but replace the garlic with sautéed frozen green beans seasoned with garlic powder because then I can tell myself “it at least has vegetables” and I don’t have to cut anything

@ejk this is the most valid thing I have ever heard in my entire life. Chopping veg while you’re exhausted is the worst.

@katherine if I'm up to cooking, I love to make carbonara, especially with mushrooms added. Just bacon, mushrooms, eggs, garlic, cheese & black pepper on spaghetti is perfect

@MercuryZelda GODDD I’ve been meaning to try and spin up a vegetarian carbonara for ages because all my omnivore friends love it. That sounds delicious.

@katherine When im exhausted at the beginning of a day its annoying that what i need and what i have the energy to cook are very different.

I think lately something pasta or gnochi. simple and i just throw in pesto from a jar and some ham and whatever else i find and its a meal.

I think if i get more practice making a paella like dish ill do that. little more complicated but can make a nice comforting meal.

@diffractie I very much feel this from times in my life when my fatigue has been its worst. Jar pesto is an absolute legendary comfort meal.

@katherine when I want to remind myself that I like food: eggs, bacon, broccoli and mushrooms. All fried. (you can do whatever you want with the eggs in the pan).

Sometimes with bread, mayo and my favorite Swedish mustard.

It's a umami bomb that's just revives my senses, and it's fairly easy to make.

@katherine if I don't have energy for that I'll probably make instant noodles with frozen veges in.

I always add extra flavours to my noodle soups, so like green curry pastw (if I have it), soy sauce, some kind of fond, coconut milk powder, ginger, garlic.

@katherine these aren't what I consider comfort food though. What I really make when I want comfort food, but takes a bit more spoons is rice, with peas or sweet corn, and some delicious sauce or gravy (which ever one you prefer really). And it's just my favorite comfort food.

@maloki oh yeah when I have the energy and want a treat I will put the effort in and make egg fried rice with veggies and fried tofu - it is wonderful. The other two you mentioned sound lovely too, I’m absolutely gay for simple soups, especially ones with soy sauce and noodles 💛

@katherine green chicken enchilada casserole. we always have chicken, cheese, tortillas, and enchilada sauce around, but if i'm tired i'll layer it like lasagna instead of rolling them individually and then ta da, mexican food made easy (plus a side of refried beans and rice, we're mexican so its always in the fridge already)

i'm also an enormous fan of comically large salads, just whatever is leftover in the fridge on top of salad and veg from our garden.

hard to beat a classic ass quesadilla with cheese and chicken tho, dang. that too.

@popstar god all of these sound absolutely lovely!!! Tortillas are absolutely my favourite bread and I keep them around always because literally everything you can use them for is wonderful. Salads are a shout too
